Clarissa + an Orange Crayon + Quiet Time =

ARTWORK!!!


I opened Clarissa's door yesterday after quiet time was over and the first thing she says to me is "no, no draw on wall." She apparantly knows that she shouldn't do it, but why should that stop the fun?!?!?!?

All I can say is I am grateful for...



This product truly is MAGIC! Clarissa helped me clean the wall last night, and you can't even tell that she colored all over it.

I'm So Glad When Daddy Comes Home!


Quinn has been in Chicago since Saturday helping his mom. Clarissa was so excited to see him today when he came home. As soon as he came home, she was ready to have me leave, she kept saying "Mommy go to the store". I guess she really missed her dad. We are so grateful that he was able to help his mom out for the last few days, but we really missed him and we are glad that he's home.

Pretzel Cookies

I realized yesterday that I haven't spent much time cooking with Clarissa just for fun. She loves to help me in the kitchen, but I feel like I am always in a hurry to get dinner made, and don't cherish the time.


So, I decided that we would make some cookies just for fun yesterday. I have a kids cookbook, so we looked through it and decided on making some pretzel cookies.

Even though I know I could make the cookies a lot faster by myself, I decided to let her help with every step. They turned out great despite the fact that Clarissa tried to dump in a bunch of salt, add extra eggs, and toss in a toy into the mixer, luckily she didn't succeed.






I did shape most of the cookies, but I did let her do one by herself.






As we were making these cookies, she decided that we were making them for friends. So I asked her which friends she wanted to take them too. She named all of her friends, so we had to narrow it down to just a couple. She was so excited to put the cookies on plates for her friends. We delivered them today.



Of course every good cook has to taste their own creation. Needless to say, Clarissa loved making the cookies and especially loved eating them. I loved taking the time to focus on this project with her. I am realizing that she is growing up fast and that I'm going to miss out on some special memories if I don't take the time to do activities like this.

Finally, a full CUPboard!!!

Living true to it's name, our cupboard is finally full of cups/glasses again. We got a set of 16 glasses when we got married, and I have managed to break all but 3. At least 6 of which were broken in the last few months before Christmas. I told Quinn that the one thing I wanted for Christmas was some new glasses for our kitchen, luckily he remembered. Now I feel like we can finally invite people over for dinner again and they would have something to drink out of, other than a TGI Fridays kids cup.

Wicked


For an Anniversary/Christmas present, Quinn gave me tickets to see Wicked. (Our anniversary is four days before Christmas.) I think he was more excited to see it than I was, good thing I chose him as my date!!! Quinn's parents watched the kids for us while we went to downtown Chicago last Thursday night. This week is the last week it's in Chicago, so we went just in time. We had a wonderful time, it was an awesome performance. I remembered to take our camera up to Chicago with us, but I forgot to take it out of the diaper bag when we went downtown, so unfortunately we didn't get any pictures.

Thanks to Randy and Judy for watching the kids so we could have a nice date. Thanks to Quinn for taking me, I love you so much. I am so happy that I married you, it has been four wonderful years.

Homemade Noodles

For Tuesday's soup I made Turkey Noodle Soup. I had some leftover turkey from Thanksgiving in the freezer so I thought I would make my own broth for this soup. I won't go into details, but I don't think this soup turned out very good. However, the one good thing about it was the homemade egg noodles. Whenever I make a noodle soup, I love to make homemade noodles. They were the best part of this soup, and other than taking a little time to make, they are really easy.


Egg Noodles

1 beaten egg
1/2 tsp salt
2 Tbsp milk
1 cup flour

Mix ingredients together, and roll out really thin. Cut into desired size. I like to make them a couple hours before I have to cook them, so I separate them and let them dry a little until ready to cook. Add to boiling water, they just take a couple of minutes to cook.

Stickers


I wanted to blog something today, but Quinn has all of the most recent pictures on his computer, so I thought I would blog about something older. I have wanted to blog about this, but haven't had a chance until now.


Last year when I was teaching Clarissa about body parts and the names, I would use stickers to help. So we would put stickers on her nose, toes, cheeks, elbows, etc. I thought this worked pretty well. But since we did that, every time she would get a sticker it would immediately go on her nose, or sometimes mine, even if we were at the grocery store. Luckily at the store I could usually convince her to put it on hers rather than on mine. She has since grown out of this stage, but it would make me smile every time I saw her running around the house or store with a sticker on her nose.

Black Bean Soup

I made this soup last night, but I didn't take a picture. I got this recipe from my friend April, (thanks, April). I really liked it, but it would have been better if I would have put avacado and cilantro on it. It was pretty easy to make (I made the first step easier by cooking my beans in the crock pot rather than on the stove) but it makes a lot.


Black Bean Soup

Dried beans tend to cook unevenly, so be sure to taste several beans to determine their doneness in step 1. For efficiency, you can prepare the soup ingredients while the beans simmer and the garnishes while the soup simmers. Though you do not need to offer all of the garnishes listed below, do choose at least a couple; garnishes are essential for this soup as they add not only flavor but texture and color as well. Leftover soup can be refrigerated in an airtight container for 3 or 4 days; reheat it in a saucepan over medium heat until hot, stirring in additional chicken broth if it has thickened beyond your liking.

Makes About 9 Cups, Serving 6

Beans

1 pound dried black beans (2 cups), rinsed and picked over

4 ounces ham steak , trimmed of rind

2 bay leaves

5 cups water

1/8 teaspoon baking soda

1 teaspoon table salt

Soup

3 tablespoons olive oil

2 large onions , chopped fine (about 3 cups)

1 large carrot , chopped fine (about 1/2 cup)

3 ribs celery , chopped fine (about 1 cup)

1/2 teaspoon table salt

    5 - 6 medium cloves garlic , minced or pressed through garlic press (about 1 1/2 tablespoons)

1/2 teaspoon red pepper flakes

1 1/2 tablespoons ground cumin

6 cups low-sodium chicken broth

2 tablespoons cornstarch

2 tablespoon water

2 tablespoons lime juice , from 1 to 2 limes

Garnishes

lime wedges

minced fresh cilantro leaves

red onion , finely diced

avocado , diced medium

sour cream

1. FOR THE BEANS: Place beans, ham, bay, water, and baking soda in large saucepan with tight-fitting lid. Bring to boil over medium-high heat; using large spoon, skim scum as it rises to surface. Stir in salt, reduce heat to low, cover, and simmer briskly until beans are tender, 1 1/4 to 1 1/2 hours (if necessary, add another 1 cup water and continue to simmer until beans are tender); do not drain beans. Discard bay. Remove ham steak (ham steak darkens to color of beans), cut into 1/4-inch cubes, and set aside.

2. FOR THE SOUP: Heat oil in 8-quart Dutch oven over medium-high heat until shimmering but not smoking; add onions, carrot, celery, and salt and cook, stirring occasionally, until vegetables are soft and lightly browned, 12 to 15 minutes. Reduce heat to medium-low and add garlic, pepper flakes, and cumin; cook, stirring constantly, until fragrant, about 3 minutes. Stir in beans, bean cooking liquid, and chicken broth. Increase heat to medium-high and bring to boil, then reduce heat to low and simmer, uncovered, stirring occasionally, to blend flavors, about 30 minutes.

3. TO FINISH THE SOUP: Ladle 1 1/2 cups beans and 2 cups liquid into food processor or blender, process until smooth, and return to pot. Stir together cornstarch and water in small bowl until combined, then gradually stir about half of cornstarch mixture into soup; bring to boil over medium-high heat, stirring occasionally, to fully thicken. If soup is still thinner than desired once boiling, stir remaining cornstarch mixture to recombine and gradually stir mixture into soup; return to boil to fully thicken. Off heat, stir in lime juice and reserved ham; ladle soup into bowls and serve immediately, passing garnishes separately.

baby pictures


I was looking through some old pictures today, and found some of Clarissa. I can't believe how tiny she was when she was first born. I know that the picture of her and the one of Clayton aren't taken from the same distance away, but you can still see the size difference. Both of these pictures were taken at the hospital before they came home. Clarissa was 6 pounds 3 ounces and Clayton was 7 pounds 15 ounces. It's amazing what a difference that can make. Clarissa looked so tiny in her car seat when she was first born, I never thought she would grow into it.
